We've taken over a program that is in a major rebuild. They've been woeful for the past decade. We've done nothing but improve for the past two years. Finally have all kids in weightlifting class, watch opponent scout film, chalk talk, watch game film, etc. The kids see the improvements and are excited about it. However, we still have bad habits of hanging our heads and accepting defeat as soon as the scoreboard is in favor of the other team. It's like "well, we've seen this movie before....it's over" even when it's a one score game.
My question is does anyone have anything they do that puts the kids in "no win" situations (in practice or weight room) that encourages them to continue to fight their way through? I've beaten my head against the wall trying to figure out a way to simulate this so that it carries over in the game. Any suggestions are appreciated.

Kids learn that by "surviving" summer conditioning-weight lifting and rigorous Pre-Season practices.
They also learn that they can count on their teammates who have gone through the same process as they have and thus would never let them down by giving in or mutinying.
Once they have invested so much of themselves in the team and game it will be near-impossible to quit.

Get them off the scoreboard. You have to convince them to play one play at a time and each play do your job and get better at it.
Be a book. Read a page (a play) and then turn the page. Got to turn the page. Good life lesson.

We started every practice with a competition. You got to compete. Doesn't mean you always win, but if you don't compete will for sure not win. Got that from Bob Shore. Put mismatches together so there is a underdog. Play up the underdog, if they win really play it up. If they lose, no excuses, tell them why they lost and improve it so you don't lose again. Then don't play up the underdog just expect them to do the job.
